Free Healthy Recipe - Chocolate Chia Hedgehogs

Low fat, Low sugar, Wheat Free

2 tbsp chia seeds
6 tbsp water
2 cups rolled oats
1 cup dates, chopped
1 cup sultanas
½ cup almonds
2 tbsp cocoa powder

Soak the chia seeds in water and set aside for 10 minutes until they form a jelly like consistency.

Combine the oats, dates, sultanas, almonds, cocoa and vanilla essence in a food processor until the mixture resembles fine breadcrumbs. Add the chia seeds and process for a further minute until well combined.
Using your hands mould the mixture into balls.
Refrigerate for 30 minutes before serving.
Makes 24.

Makes 24 servings (serve = one hedgehog)
