



Free Healthy Recipe - Beetroot, Mango and Goat's Cheese Salad
Gluten free, Low carbohydrate, Low fat, Low sugar, Wheat Free
A very fussy-eating friend of mine described this salad as a 'taste sensation' and I am still reeling from the compliment. The tartness of the pickles against the sweetness of the mango is simply divine.
Ingredients
2 tbsp walnut pieces
12 pieces pickled beetroot, (see recipe list)
1 mango ripe and cut into cubes
2 cups beansprouts
1/3 cup goat's cheese, or ricotta cheese

Method
Dry roast the walnut pieces in a frying pan and leave to cool. Mix the beetroot slices and mango cubes together, then arrange on a plate with the beansprouts, goat's cheese or ricotta and the walnuts. Makes 2 servings
