Free Healthy Recipe - Potato, hot smoked salmon and macadamia mayonnaise salad

Dairy free, Gluten free, Low sugar, Wheat Free

Any time of year this salad is delicious but I particularly like it at Christmas when we can go "all out" and treat ourselves to a luxurious home made macadamia mayonnaise.

Ingredients
1 tbs salted capers, rinsed
4 tbs macadamia mayo, (see recipe)
1 packet Huon hot smoked salmon, flaked
½ cup macadamia nut, halved
1 cup rocket leaves, washed
Method

Boil the potatoes for about 25 minutes until tender. Drain and set aside to cool.

Cut the potatoes in half and place in a bowl and add the capers, mayonnaise, flaked salmon and macadamia nuts.
Fold the ingredients together gently.
Serve on a bed of rocket and season with black pepper
