Free Healthy Recipe - Festive rice stuffing

Dairy free, Low fat, Low GI, Low sugar, Wheat Free

For a traditional Christmas with a little twist this year,try this delicious festive stuffing using RicePlus. The combined wholegrains add texture and a delicious nutty flavour and boost the fibre content of the meal.

Ingredients
1 cup RicePlus, rinsed
2¼ cups water
2 tbs sage, chopped
2 tbs lemon thyme, chopped
¼ cup cranberries, roughly chopped
1 lemon zest
1½ tbs lemon juice
¼ tsp sea salt
¼ tsp pepper
Method

Cook rice according to instructions on pack.

Mix cooked rice with chopped herbs, cranberries, lemon juice and lemon rind. Season with salt and pepper.
Use to stuff turkey breast, chicken or large field mushrooms
