Free Healthy Recipe - Zingy green salad

Dairy free, Gluten free, Low carbohydrate, Low GI, Low sugar, Wheat Free

For those who love using their veggie spiraliser, here's a fresh clean tasting salad that, served warm will jazz up any piece of grilled meat or fish.

Ingredients
3 zucchini spirally cut
1 cup peas, shelled
200 g snowpeas, trimmed
3 cups rocket
1 cup parsley
½ tbs capers
1/3 cup olive oil
Method

Plunge the zucchini in boiling water for 1 minutes, then strain through a sieve.
Lightly steam the peas and snow peas for 2 to 3 minutes
Arrange the rocket on a plate with the other greens.

Mix together the parsley, lemon juice, capers and olive oil in a blender. Season with pepper.
Drizzle over greens and serve
