Free Healthy Recipe - Pack 'n go lunch

Low GI, Low sugar

This is one of quickest lunches to make when you're working all day and there's limited access to a healthy, tasty food. With practise it takes about 5 minutes to whip together

Ingredients
2 slices bread - rye
20 grams goat's cheese, soft
1 slice avocado
1 tsp kimchi, available from health food store or greengrocers
½ tsp salsa verde, see related recipe below)
½ cup mixed salad leaves, washed
4 cherry tomatoes halved
1 tsp lime juice
Method

Spread the bread with the avocado, goats cheese and top with kimchi and salsa verde and sandwich together.
Fill a small tub with salad greens, sprinkle with lime juice and top with tomato halves.
Pack it up, pop it in a lunch box with a cooler brick and go !
