Free Healthy Recipe - BBQ tuna with sweetcorn salsa

Dairy free, Gluten free, Low carbohydrate, Low GI, Low sugar, Wheat Free

This is one of the summer recipes from The Greengrocer's Diet. It's super simple and quick to make. Those who don't like fish can substitute the tuna with chicken.

Ingredients
½ red capsicum diced
1 handful coriander, chopped
1 lime juiced
1 red chilli seeded and chopped finely
340 grams tuna steaks
1 lime cut into wedges to serve
Method

Preheat a grill pan or BBQ to hot. Meanwhile steam the sweetcorn for 3 - 4 minutes. Remove the corn from the heat and rinse in cold water. Use a small knife to remove the kernels into a small bowl. Add the capsicum, coriander lime juice, and chilli. Season with a pinch of salt.
Brush both sides of the tuna steaks with olive oil and season with pepper.
Cook the tuna on both sides for 3 - 4 minutes.
Transfer the tuna to two serving plates and serve with the salsa and lime wedges.
