Free Healthy Recipe - Warming Oat and Vegetable Soup
Dairy free, Low fat, Low GI, Low sugar, Wheat Free
Perfect for those chilly winter days, this soup will warm you from the inside out. The groats used in the soup give it a lovely creamy texture.
1 large carrot
, peeled and cut into chunks
peeled and sliced
Prepare all the vegetables in advance.
Saute the onion and leek for 3-4 minutes. Add the rest of the vegetables. Add the stock and the groats and bring to the boil. Reduce to simmer for 2 hours. Season to taste.
