Free Healthy Recipe - Peach & Smoked Duck Salad

Dairy free, Gluten free, Low carbohydrate, Low fat, Low GI, Low sugar, Wheat Free

480 grams duck, breast smoked and thinly sliced
3 peaches ripe, yellow, cut into wedges
½ onion - red thinly sliced
4 cups watercress
100 grams ricotta, firm, broken into large pieces
3 tsp mustard, dijon
½ cup hazelnut, toasted, skins removed and roughly chopped
60 ml verjuice

To make the vinaigrette, whisk the last four ingredients (oil, verjuice, mustard and oil) in a bowl until emulsified. Season and stir through the walnuts.

Arrange the salad ingredients on a platter or large wide salad bone.

Drizzle with the vinaigrette and serve.
