Free Healthy Recipe - Smoked Salmon Savoury Muffins with Salsa Verde

Dairy free, Low fat, Low GI, Low sugar

These muffins make a quick, tasty and nutritious breakfast that the whole family will enjoy. Never again can the words be uttered "I didn't have time for breakfast". Simply make the night before and enjoy the next morning for breakfast, lunch or a light dinner.

Ingredients
1 cups flour - unbleached, plain white
1 cup flour, rye
2 tbsp chia seeds
2 tbsp chives, chopped
100 grams smoked salmon, cut into small pieces
1 cucumber lebanese, grated
3 eggs
1 cup buttermilk
Method

Preheat oven to 180C.

Preheat the oven to 180C

Sift the flours into a bowl with the baking powder
Stir through the chia seeds and smoked salmon.
Squeeze any excess moisture from the cucumber and add to the dry ingredients
In a separate bowl mix together the oil, eggs, buttermilk and pepper. ,
Quickly fold the wet ingredients through the dry.
Line a cup muffin tray with baking paper and fill with the mixture.
Place in the oven to bake for 35 minutes.
Turn the muffins out onto a cooling rack.
Serve with tsp salsa verde.
