Free Healthy Recipe - Onion Butter

Dairy free, Gluten free, Low carbohydrate, Low fat, Wheat Free

This "butter" is useful for any dish that requires a sweet vegetable flavour. It is delicious in savoury pies and tarts, sauces and as a spread. Keep in an airtight container in the fridge for up to one week.

Ingredients
6 large onions, peeled and roughly chopped
½ cup water
large pinch sea salt
Method

Place onions, salt and water in a heavy based saucepan, making a snug fit.
Cover. Place over a low heat and cook for 6 hours - adding a little more water if needed. The mixture is ready when the onions have broken down into a pulp.

Makes 4 servings (serve = 1/2 cup)
