Free Healthy Recipe - Carrot and Sultana Salad with Lemon-Olive Dressing
Dairy free, Low carbohydrate, Low fat, Low sugar
Perfect to pack for picnic lunches, this interesting salad will complement any meal. Use leftovers in sandwiches or mix with cooked brown rice for lunch the next day.
3 cups carrot, grated
¼ cup celery, diced
½ cup sultanas
¼ cup parsley, diced
¼ cup spring onions, diced
4 tbsp olive oil
1 tsp maple syrup
2 tbsp lemon juice
1 tsp stone ground mustard
Combine carrots, sultanas, almonds, parsley, celery and spring onions. Combine all salad dressing ingredients and whisk until creamy. Add to the carrot mixture, toss and serve.
Makes 8 servings
